Eggs and I have a love/hate relationship. I think it’s because my mom was allergic therefore sometimes I really can’t stomach it.
If it’s not spicy, and if it’s not completely cooked or “well done” then I can’t eat it. As such, I can never eat eggs sunny-side up, poached or scald, just thinking about that makes me sick.
If I fry eggs then it has to be DRY and VERY crispy.
However, most of the time I beat my eggs and season well with escallion and pepper and cheese and then “fry” it. It really is like a cross between a frittata and an omelette.
I also like to add fruit (papaya and bananas) and a slice of buttered wheat bread and of course tea. My favourite tea at the moment is Twinnings of London “Tranquility” tea which is mainly chamomile.
You’ll need:
Country Crock butter, scotch bonnet pepper, New Zealand Cheddar Cheese & escallion
Mrs. Dash Italian Medley
I used three eggs and about half of the cheddar (grated), and added the seasoning
Beat quickly and not too long
Add the butter to the frying pan and pour in the mixture. Cook for about 3-5 mins on each side.
Prepare the tea and fruit of choice.
